Easy Salmon or Halibut with a taste of the Mediterranean By Corinne Copelan
An other easy way to make a quick and delicious fish is to put it in a glass dish, and ad three layers on top: sliced tomatoes, sliced onions, sliced fresh lemon, then put a little salt and pepper, a little olive oil, some Italian blend herbs and cook it in the microwave, toaster oven or regular oven. Of course this will depend on how many people you are cooking for. For a quick lunch and for about 1 to 3 people you may use the microwave. The toaster oven might be more your thing if you like the 'grill feel' on fish, and the oven should be your choice if it is for a bigger meal like Dinner for the family or for receiving a few friends and family. It is a surprisingly easy and tasty dish. You can cook some rice on the side (I, myself never use instant rice because it is not satisfying in taste as the real thing) but for a college student or an easy lunch, I can see the appeal. The rice should be plain, cook in just water with a hint of salt and oil. Again the microwave is a great tool shortening the cooking time and making it easier also on the clean up. The salt and oil will stop any rice from becoming sticky and in the contrary will keep it light. Then when you serve, just put a portion of fish in each plate, some rice on the side and add the sauce/juices of the fish and vegetables on the rice. It will add plenty of flavor.
